I just happened across this quad core device, the Fujitsu FR1000.  It appears to have an interesting toolset called SOFTUNE.  Much of the related documentation is only available in Japanese, however.

Texas Instruments has been making commercially successful multicore devices since the original OMAP for cellular handsets.  I just happened across their Multicore web pages.  Some good presentations and material.
